Stumbled across this crumble banana muffins and decided i should try them out,as it is i am not a fan of having banana in my pastry but after trying out this i actually liked it.The crust is sweet,buttery&crunchy just as i expected it to be,the inside was moist and fluffy heaven.Need i say more i liked every bit of it and so should you,its so simple to whip up with readily available Ingredients.
1 teaspoons baking powder
1/2 teaspoon salt
3 ripe bananas
3/4 cup granulated sugar
1 egg lightly beaten
2 tablespoons butter
11/2 cup flour
1/3 cup brown sugar
1/4 teaspoon cinnamon
1 tablespoon butter
2 tablespoon flour
In a large mixing bowl you mix together the flour,salt&the baking powder.Set aside
Proceed and blend together the eggs,bananas,sugar&the melted butter.This you can achieve using a hand mixer a spoon or whichever tool you will deem fit,i personally am accustomed to using my blender its more efficient and less messy.
Next you go ahead and introduce the blended mixture into the the dry ingredients,mix this together just until moistened
Spoon this into your greased muffin cups or muffin liners .i usually pour my batter into a jug and proceed to carefully pour into my muffin cups,an ice cream scoop can be used to achieve even portions,i love my jug technique as it doe’s the job neatly, no mess to clean up after
In a small bowl mix together the brown sugar,2 tablespoons flour, cinnamon &1 tablespoon butter
Mix this up together until the mixture gets crumbly
Proceed to generously sprinkle your muffins batters with this to suit your taste,i have a sweet tooth so well..
When done,you go ahead and bake in a preheated oven at 190° Celsius or until a tooth pick inserted in the middle comes out clean.bake 18 to 25 minutes.
Now this happens to me a lot,if your muffins brown early and look like they are going to burn and its not yet done,no need to worry, just cover them with an aluminium foil,do not reduce oven temperatures as this will collapse your pastry,just have an aluminium foil at hand,this is bound to happen to us self teaching chefs no need to worry.
Take your muffins out when done and set them out on a rack to cool before serving.
This recipe makes about 12 muffins
Muffins will last up to 3 days left in a cool dry place.Hope you enjoy.
