pulled chicken is a versatile dish that is easy to bring together without necessarily breaking a sweat in the kitchen.This is the type of dish you make to feed a crowd,it can also be refrigerated and used from time to time to snack on or even later as a main course,i also find it works real well in tacos.This kind of meal is perfect for when you are hosting friends over as its so easy to whip up,amazingly tasty,do not for once under estimate this sandwiches as they do pack a punch and will for sure get your friends stuffed.
I personally enjoy this coz it leaves behind very little to clean after your friends are done so you definitely have to check this out.
I hate doing the dishes i must confess.
Chicken also is a more healthy substitute for pork and beef personally i have never cared on such,all food should be equally enjoyed, you just have to eat responsibly.
More cook less talk lets get down to making this bad boys.

1 kg chicken
(Thighs work best,i used breasts as its what was available,you can also use a whole chicken bone in,just be sure to skin it first)
1 cup ketchup
2 tablespoons prepared mustard
2 teaspoons lemon juice
2 garlic cloves
1/4 cup brown sugar
2 tablespoons Worcestershire sauce
1/2 tablespoon chilli powder
1/8 teaspoon cayenne pepper
1 Rosemary spring
1 large yellow onion
1 thyme spring
Salt to taste

You chop up the onions and garlic,throw them into your pressure cooker, mix in all the other ingredients and toss around generously.

This is a recipe best suited in a slow cooker though we have to work with what we have,don’t we?
Now next you wash your bird clean with running water and generously coat with the marinade in your cooker.

Add about a pinch of salt to your taste,you can always add in more chilli for those who love their sandwiches spicy.
I went ahead and poured in about 3 cups of water,sealed it up and placed it on heat,I used a jiko as it has been working well on my pulled meats,i also find it cheaper too, but whatever floats your boat.
Have chicken cooking for about an hour in your pressure cooker or two hours in your sufuria,as my pulled meat cooks i usually use age time in between to bake sweet burger buns though you can get this from the supermarket shelf to save you on time and cut you out from the fun.
When your meat is done transfer it into a clean bowl and using your fork or hands,pull apart the meat discarding the bones

I divided my batch into two and added barbeque sauce in the second batch to give it that grill taste.
I liked it just plain from the cooker but we all are different you might just end up loving either of them.

Get your sandwich bread,burger buns or even tacos and prepare your sandwich top with shredded cheese, I love my cheese.
