This is a delicacy native to Germany,I found it simple to prepare and it tasted absolutely fantastic, after you get the hang of it you can fine tune your fillings and change the way you have been eating,this meat and cabbage mixture filled sweet rolls do make a great main dish and also as a snack as they do reheat very well.
The dish is also so versatile and you can add basically what you feel like,i once had it stuffed with beef stir fry, it was amazing.
So you definitely gotta check this out.
I am going to show you step by step,from the dough to my stuffing,this dough recipe is also my Burger buns recipe.I have however sweetened this up.
2 cups milk
1 cup water
1/2 cup butter
9 cups flour
3 tablespoons active dry yeast
1/4 cup sugar
1 tablespoon salt
1/4 cup honey.
In a bowl add your water,the water should be warm at temperatures about 50°Celsius, you then add two tablespoons of sugar mix well,add in your yeast,again mix this up well and set aside for 8 minutes for our yeast to proof.
As the yeast is proofing, I went ahead and in a large bowl mixed my flour,
In a separate bowl mix in the warm milk, melted butter & honey.You then go ahead and mix in your eggs.
At this point our yeast should be ready and looking like this.
Make a hole in the dry ingredients and mix in our yeast,I then went ahead and mixed my creamed mixture into the dough little by little. Knead your dough for at least 8 minutes.
Set this dough in a greased bowl and cover with a dump cloth,set it aside to rise about 1 and a half hours.
As our dough is rising we are going to make the stuffing.
1 Kg ground beef
3 chopped onions
Shredded cheese(i used Cheddar )
2 teaspoons salt
3 cups chopped cabbage
2 tablespoons Worcestershire sauce
Hot sauce of your choice (optional)
In a pan over high heat,brown your beef,and onions when the beef is cooked and brown to the eye.
I cooked this until the onions were soft and added my cabbage
Add in your salt,Worcestershire sauce and a dash of hot sauce to your taste.
Cook for about 20 minutes then set aside and let it cool.
After about 1 & half hours, my dough was ready and had doubled up in size.
I then on a floured surface punched it down and kneaded for a further 4 minutes.Separate this into balls just larger than a golf ball.Should make about 24 servings.
On a floured surface using a rolling pin flatten your dough.Apply a layer of your cheese shredding and then top up with your beef stuffing.
Now,hold the sides and pinch the sides to the center.
Now,I placed this in my greased baking tray pinched side down,let it rise for close to 40 minutes.
Go ahead and mix an egg with a tablespoon of water,brush this on top of the buns and sprinkle with sesame seeds.
Bake this in a preheated oven at 185°Celsius for 25 minutes.
Don’t they just look delicious.
Serve hot with sauce of choice or just plain.Went down well with thai siracha sauce for me and a beer,spoil yourself.
