I was handed down the recipe of this north African cuisine by a friend,and knowing myself being one to never back down from any challenge, welcomed it with open arms.let not the name scare you of,molokhia is just how the Egyptians call their Mrenda,or jute as it is known in English.
This is one healthy dish,packed with all sorts of flavours and aromas,the health side of it is also unmatched, this is due to the molokhia being a super food and just how this dish is prepared in general.
1 large onion,quartered
20 cardamon pods
2 cinnamon sticks
2 bay leaves
10 cloves garlic
2 teaspoons salt
4 teaspoons olive oil
2 tablespoons coriander seeds
500 grams molokhia
2 tablespoons ghee
1 teaspoon lemon juice.
In a large pot,i added the chicken,onions,cardamon,cinnamon, bay leaves, salt and my chicken.Fill in water just until covers the chicken.5 cups or so.
Bring this to a boil,be sure to remove the foam that will form on top as it boil until no more foam is re appearing .I then turned my heat to low and let it simmer for about 20 minutes.
As this simmers,we are going to make our taqliya.To Make this you grind together with a pestle and mortar the garlic,olive oil,coriander and salt.
I went ahead and prepared my molokhia by separating the leaves from the stem and mincing it to fine pieces, you can use your food processor or blender at this point.
When our chicken is cooked,take it off the pot and place it in a bowl,be sure to cover it up with a plastic wrap,we dont want our chicken dry now do we?
Wash your rice and cook,i used some of my chicken broth to cook my rice,turned out flagrantly amazing,
Take 1/3 of our taqliya and spread it all over your chicken,then bake in your preheated oven at about,230° Celsius for 15 mins,this is not to cook the chicken but to just brown it up.
Take half of the taqliya and in a sufuria fry it up until fragrant, add in your chicken broth and the molokhia and simmer for 8 minutes.
In a separate pan add in the remaining taqliya along with our ghee,fry till it has browned up,add this mixture and the lemon juice into our molokhia.
Cut up your chicken and serve it up with rice and the molokhia.
