I am a slave to my cravings and when I woke up in the morning in a muffin mood I just had to bake me some fresh yummy muffins. With no thought at all I settled on these delicious orange poppy seed muffins, I love the aroma and the taste of oranges in the morning,I also find poppy seeds good looking and add a tasty crunch in my muffins.
These muffins are so simple to make and will sure get you the raves on the table,not to mention how they have my kitchen smelling all sweet,warming up my cold mornings, you will just fall in love with them.


3 cups flour
1 tablespoon baking powder
1/4 teaspoon baking soda
11/2 teaspoons salt
3/4 cup sugar
2 tablespoons orange zest
3 oranges
11/2 tablespoons poppy seeds
1 cup fresh orange juice
2 tablespoons butter(margarine will do you just fine)
3 eggs.

I started by grating the zest out of my oranges and set it aside.


I went ahead and mixed all my dry ingredients in a large bowl(flour,sugar,baking soda,baking powder,orange zest & my poppy seeds).set this mixture aside.


I squeezed juice off my oranges,I am gonna let you in to my secret on this,I usually just peel my orange,chop it up into small pieces,and just throw them into my blender.
Pass your blended oranges through a strainer and you are good to go.
This way my juice just isn’t a colourless fluid,it comes out rich in orange goodness, all natural with no food colouring, this will do as good in giving colour to our muffins.

Next I melted my margarine and together with my eggs I added them into my orange juice,mix this up good.
I proceeded and poured my liquids into my dry ingredients, using my ‘mwiko’ I mixed this up well until no dry ingredients were visible.  

Looks good or what?

Spoon this up into your greased muffin cups,or have them lined up with muffin paper cups of choice, these bad boys make your work a lot easier trust me.

Have your batter about 3/4 full

I put this into my preheated oven at 175° for about 20 to 25 minutes until a tooth pick inserted in the middle comes out clean.

You getting hungry or what?

Let our muffins cool down on a rack,serve warm.
This recipe makes about 14 muffins.


Making this delicious muffins couldn’t get any more easier.
