BUFFALO CHICKEN WINGS.

Schools are on holiday and my youngest sibling is around visiting,what a better way to welcome my favorite small sister than these delicious sticky  Buffalo wings,I did myself good on this one coz she couldn’t have enough of them.They are delicious and easy to make,once you get the hang of it,you can go ahead and customize it to
suit your taste,i normally go hot on my wings but i had to go mild with these bad boys,chilli is a taste she has yet to acquire.
This are also perfect for when you have friends over,they can snack on this watching that football match or at your   ‘chama’ meetings.

INGREDIENTS.
1 kg chicken wings
(Separate the drums from your flats.Discard the tips)
1/2 cup flour 
1 teaspoon baking soda
1 tablespoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon black pepper
1 tablespoon salt
1/4 cup butter
1 tablespoon Worcestershire sauce
Hot sauce of your choice
1/2 cup ketchup
1 tablespoon brown sugar.

DIRECTIONS.
I started off by washing my wings with clean water,using a sharp knife,I separated the drums from the flats discarding my tips.
Next I mixed together my flour,baking soda,black pepper, paprika, cayenne pepper and the salt.Baking soda will get your  chicken really tender and crispy on the outside. 
I coated my wings using my flour mixture generously.

I then set my wings into the refrigerator, this is to have them marinated for close to an hour.
After 1 hour,I took them out and the flour coating had really incorporated well with my wings.

This were now ready to go into the fryer.I had cooking oil heated up in a pan,make sure its enough to deep fry the wings having them fully submerged in the oil.
When my oil was hot enough, I put my wings in and had them frying.
Have your wings cooking for about 12 minutes in the hot oil,until they are nice and golden brown in colour, after about 8 minutes they should start floating to the top.

This are are just about done,so after 3 more minutes I took them off the oil and set them aside to drain.

They just look good to eat already don’t they?.
Now to finish it up I made my sticky sauce.
In a pan I melted my butter, mixed in my  ketchup, Worcester sauce,1 tablespoon brown sugar,a pinch of cayenne pepper and black paper to taste.
(Now if you want your wings hot,substitute the ketchup with hot sauce,it will work just fine.)
I brought this up to a quick boil then simmered this up for 2 minutes.

toss this sticky sauce to your wings and serve hot.
