I have tried different Lemon muffin recipes over time but none seems to really have that lemony taste,most are just Lemon flavoured but lack that lemon kick in them.
That was until now,this muffins are rich in flavor and the lemon syrup just does the magic to this babies,the toasted sesame seeds in there also provides for exotic flavour and texture.
21/2 cups flour
1/2 cup sugar
1/2 cup sesame seeds toasted
1 tablespoon baking powder
1/2 teaspoon salt
4 large lemon’s zested and juiced.
11/4 cup milk
1/2 cup margarine
1 large egg
1 teaspoon vanilla
In a large bowl I started off by mixing together my dry ingredients(flour,sugar,salt,sesame seeds,2 tablespoons lemon zest & baking powder) .
In a separate bowl,I creamed together my milk,margarine,vanilla&my egg.
I proceeded to introduce this into my dry ingredients and mixed them up until no dry ingredients are visible,do not over mix at this stage as it will compromise on the texture of the muffins.
Grease your muffin cups or line them with muffin papers and spoon in your batter .
You then go ahead and place this in a pre heated oven at 175℃ for 20 to 25 minutes or until a toothpick inserted in the middle comes out clean.
As my muffins were baking I used the time to prepare this easy to make lemon syrup.
1/2 cup lemon juice
1/2 cup sugar
In a sauce pan I brought my lemon and sugar mixture to a boil whisking occasionally for close to 5 minutes.
Cook until your sauce has reduced a bit and is shiny.
Now when the muffins are ready,take them off the oven and using a toothpick,poke holes on top of our muffins.
Proceed to drizzle the sauce over the top of the muffins,let your muffins cool for about 10 minutes before serving.
This recipe makes for 12 muffins
