My mama ‘mboga’ seems to have a lot of chilli on her this days,apparently they are in season,I love chilli and I always have it as a side in most of my meals.
Chilli is a cheap fruit that is packed with vitamins and antioxidants not to mention it’s good for your digestion.
I bought myself some red-hot chilli peppers,into the kitchen and got myself busy.
INGREDIENTS.
100 red chilli peppers
5 garlic cloves
1 large onion
1 tablespoon vegetable oil
1 tablespoon fish sauce(you can supplement with sit sauce)
3 tablespoons rice vinegar(you can supplement with white vinegar)
1 teaspoon salt
2 cups water
DIRECTIONS.
I started off by removing the stems of my chilli.
Finely mince your onions.
Mince your garlic,I found it heating so I just crushed mine.
Place a pan on high heat alongside your vegetable oil and saute your garlic and onions until browned.
When browned you toss in your chillies whole,add in the salt,fish sauce and the water,bring this to a high and then let it simmer for about 20 to 25 more minutes until the water has reduced to the bottom of the pan.
Let this cool down for about 10 minutes .
Blend this till liquefied then add in your vinegar,taste and further customize to your taste.
Pour this up in an airtight container and refrigerate.
Enjoy.
Nice! you can use olive oil instead, it acts as a preservative so you can keep the chilli even longer.
