This recipe is ideal when grilled on an open fire over hot coals.Nothing beats the smoky flavour from the coals,not to mention the beautiful grill marks you get on your bird.
However you can have this beer marinated drumsticks grilled in your home oven with no hustle at all.
This is a simple BBQ food that can be brought together to feed a gathering,all you have to do is marinate a bunch the previous night,store it in your refrigerator and you good to go.
The beer marinade along with the lime juice and the spices do make for a tender juicy and flavourful chicken.
This recipe is basically foolproof.
INGREDIENTS
1 kg chicken drumsticks(fresh)
1 teaspoon salt
1 tablespoon paprika
2 tablespoons olive oil
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 cup beer(use your favorite beer)
5 cloves garlic
2 tablespoons lime juice
1/2 cup fresh parsley
DIRECTIONS
Start off by washing your chicken in Clean running water.
Pat them dry
In a large bowl,mix in all our dry ingredients
Mince the garlic into the spices
Chop up the parsley to a fine mince
Introduce the parsley into the spices bowl
Cut up your lemon and squeeze in two tablespoons of lemon juice including the two tablespoons olive oil
Pour in the beer
Whisk this up to a consistent marinade
Using a fork poke holes into the drumsticks.
This is to allow for the marinade to seep into the chicken
Place the drumsticks into a ziplock bag
Pour in our beer marinade.
Be sure to manage the chicken well allowing for the marinade to penetrate well.
Ensure that you have no air pockets inside the ziplock bag before closing it up
Set this in the fridge to Marinate for about 4 hours or overnight
When done take it out of the refrigerator and place the chicken on a board.
Drain the leftover marinade in a bowl and set aside.
This shall be used for basting
Place this on an oven rack preheated at 200℃
Have this cook for 20 minutes basting occasionally over time with the remaining marinade
When done on one side,turn the drumsticks and have them cook for a further 20 minutes basting regularly.
When done take it out of the oven and let it rest before serving
