Teriyaki is a Japanese cooking technique in which food is grilled,fried or broiled using a glaze of soy sauce,Mirin and sugar
Teriyaki sauce is a Versatile sauce that can be used as a marinade,in a stir fry,as a dipping sauce or my favorite,thicken it and use it as a Teriyaki glaze for your oven or open fire barbecue.
Teriyaki sauce is so easy to make and once you get the hang of it you will never get store bought ones just packed with sugar and preservatives.
Well I have been craving me some Teriyaki chicken so I made this sauce in advance,I do make my sauces in bulk and store them in the refrigerator ready for when I want to whip up a quick meal.


1 cup soy sauce
11/2 cups water
1/4 cup Chinese cooking wine(amazing)
15 tablespoons brown sugar
4 tablespoons rice vinegar
2 cloves minced garlic
2 tablespoons minced ginger
1/4 cup water
4 tablespoons cornstarch
4 tablespoons olive oil
2 tablespoons sesame oil(optional)

Start of by heating your olive and sesame oil in a small pot or pan


Heat the oil until warm and pour in your minced garlic and ginger.Do not heat the oil too much as it will burn our garlic and ginger mixture.
This will ensure our oils are infused with the lovely ginger garlic flavours.


Heat this until fragrant and slightly brown.
Pour in your soy sauce


Mix this up for a few seconds,then add in all our remaining liquid ingredients,water,cooking wine and vinegar.
Also pour in our sugar
(do not pour in the 1/4 cup water,save that for later)


Give this a good mix and let it come to a boil


When this comes to a boil for like 4minutes you can turn the heat off and you have your light Teriyaki sauce, perfect for stir fry or as a marinade.
However I love mine a bit thicker so as I can use it as a glaze whenever I am grilling my meat,fish,pork or the best of all chicken.
Mix the 1/4 cup water with the cornstarch and pour this into our boiling sauce and notice it thicken almost instantly


Simmer this while continuously stiring it for about a 2 minutes then turn it of


Pour this into a sterilized air tight container and store in your refrigerator.
This Teriyaki sauce can be used as a marinade but works best as a glaze for your meats
