This is so easy to bring together not to mention the sweet aromas that will fill your house while baking this beauties.
3/4 cup vegetable oil
6 tablespoons butter
3/4 cup sugar
1/2 cup water
Mix up all your wet ingredients in a large bowl
On a separate bowl bring together our flour mixture
2 cups flour
21/2 teaspoons baking powder
1/2 teaspoon salt
Now slowly introduce your dry ingredients into your wet ingredients and mix well till smooth and consistent
Set this aside.
Time to prepare your coffee swirl mixture
1 tablespoon instant coffee
2 tablespoons unsweetened cocoa
3 tablespoons sugar
Proceed to grease a muffin tin or line it with muffin cups or papers
Pour in your muffin butter into your muffin tins about 3/4 full
Proceed to pour in each about a teaspoon of the cocoa coffee mixture
Fill in the cups just about full with the remaining batter
Using a knife,insert it in the muffin cups and gently swirl,do this for all the muffins
This are almost done.
Time to make the crumb topping that give this babies their crusty crumb
2/3 cups flour
4 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon baking powder
4 tablespoons butter
Mix all this up in a small bowl
Pour about 1 tablespoon over your muffins
Have this baking in a preheated oven at 190℃ for about 18 to 20 minutes.
Now be sure to insert a toothpick inside your muffins and if they pull out clean they are done,from experience sometimes our oven cook differently and have varying temperatures,so just check up to be sure.
And after the miracle of time,they are done.
