Peri Peri also known as birds eye chilli is a hot pepper grown in most African countries.It’s an origin of Portugal and goes by different aliases according to reagon(Peri Peri/Peri Peri/pilipili).
Peri Peri sauce is a barbecue sauce that goes well for grilling meat over an open fire perhaps popularized by the South African franchise ‘Nandos’.
It’s a blend of chillies,spices,lemon & vinegar adding an extra tang to this fiery savoury sauce.
This is an easy to bring together recipe and you can adjust the heat according to your palette.
1 cup(good)olive oil
1 tablespoon paprika(smoked if available works best)
1/4 cup chopped red onions
8 chilli peppers(go with less if you can’t stand the heat)
3 ripe red jalapeno peppers
2 teaspoons salt
1 tablespoon black pepper
8 garlic cloves
Juice of one lemon
4 Basil leaves
1 tablespoon dried oregano
1/4 cup red wine vinegar
In a blender bring together jalapeno peppers,chilli peppers,Basil,fresh garlic,onions & olive oil.
Blitz this up to a smooth consistent mixture
Now add in your remaining ingredients in,paprika,oregano,salt & pepper and your vinegar.
Blitz again until smooth & consistent
Taste your sauce and adjust for the seasoning according to your taste,you are the boss.
Pour this into a sterilized jar and store in refrigerator ready for your next barbecue.
