Peri Peri chicken is a dish tracing it’s roots both in Africa and in Portugal.
The chicken is traditionally marinated in a spicy marinade consisting of chilli peppers,fresh herbs & and spices.
This is a savory dish that it’s hard not to fall in love with,it’s so easy to bring together not to mention you can prepare your own Peri Peri marinade sauce and store it in your refrigerator ready for when you want to throw that barbecue.
Authentic Peri Peri chicken is grilled over an open fire,over hot coals.This shouldn’t be a bother as you can make your own juicy,succulent and tender Peri Peri chicken in your kitchen oven.
I had prepared my Peri Peri marinade beforehand in a batch,stored it in the refrigerator ready for when It will be of need.

HOME MADE PERI PERI SAUCE
This is a scaled down recipe for one batch of marinade enough for a large bird ranging from 1.5 to 2 kilograms.
INGREDIENTS
1/3 cup olive oil
1 large whole chicken (1.5kgs-2kgs)
1/2 Tbsp paprika(smoked if at hand)
1/8 cup chopped onions
4 chilli peppers
1 ripe jalapeno pepper
1 teaspoon salt
1/2 tablespoon back pepper
3 garlic cloves
Juice of half a lemon
1 large Basil leaf
11/4 teaspoons dried oregano
1/8 cup red wine vinegar
(Mix all your ingredients in a blender to a smooth and consistent Peri Peri sauce)
DIRECTIONS
We are going to start by spatchcocking our bird.This ensures for even cooking as for large birds thighs sometimes cook faster that the breasts.
Also by spatchcocking your chicken it increases it’s surface area allowing for better penetration of the marinade resulting to a more flavourful chicken and crispier skin,who doesn’t love that.
So place your chicken on a chopping board
Using a sharp knife cut out the backbone of your chicken
Now flatten out your chicken
Next apply your Peri Peri marinade allover your bird.
Be sure to work under the skin for maximum flavour
Place this inside a ziplock bag and pour in the remaining marinade
Place this to marinate in a refrigerator overnight for the best results.
When ready to grill,get this out of the refrigerator 30 minutes before cooking
On a gas stove heat up a griddle pan over high heat until hot.
If you don’t own one you will do just fine using any oven friendly pan if this also ain’t available,a baking tray will suffice.
When the pan is hot place your chicken on,skin side down
Cook this up for 4 minutes then turn
Proceed to cook the underside for 4 minutes.
When done transfer this in a preheated oven at 200℃ for 20 minutes.
When done let your bird rest before cutting up
