This vegan Kabobs are made up of a variety of vegetables skewered together with the savory yellow sweet potato being the star of the show.
This Kabobs are packed with tones of flavour and vitamins to keep you moving.
These Kabobs can be served as a side when you are throwing down a barbecue or as a main course for your vegematic buddies.
They are an easy dish to bring together,you can grill this outdoors on the grill,using a grill pan or inside your home oven,it’s also versatile in that you can fine tune to your own liking by skewering your favorite veggies and leaving out the not so pleasing to your taste
The ingredients here are just but a guide as you can go more on one and less on the other.you can also add in other veggies like mashrooms,apples e.t.c.
1 yellow bell pepper
1 green bell pepper
1 red bell pepper
1 large red onion
2 small sized zucchinis
2 small eggplants
1 medium sized yellow sweet potato
The sweet potato will take time to cook through if grilled raw over cooking the vegetables in the process.
Countering this we bake the sweet potato first until just about done,a fork inserted should go in easily with some resistance in the middle.
I had no time for baking so I peeled my potato and nuked it in the microwave for 8 minutes turning it halfway
Chop up your vegetables and baked sweet potato into sizable cubes
Skew your vegetables and sweet potato.
Note that when using wooden skewers,have them soaking in water for 30 minutes to prevent them from burning during grilling
In a small bowl mix in
1 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon brown sugar
A pinch of cayenne pepper
Mix this up
brush your Kabobs with olive oil and season it with the spice mixture.
Heat up your grill or indoor grill pan to medium high.If both are not in hand heat up your oven to a broil.
Place your Kabobs on your hot grill
Grill for about 8-10 minutes turning the Kabobs from time to time
If you grilling with your oven on broiler, check from time to time as they might easily burn.
When done serve hot
