This delicious,moist&flavourful chicken is easy to whip up and can be made at a moment’s notice.

The chicken is seasoned in an Italian seasoning then finished on a frying pan.The result is a flavourful bird with a moist inside and a crisp herb encrusted skin to die for.

The hardest part is the waiting as the chicken slowly cooks by itself in the pan.



(I was cooking for one so I used 2 chicken thighs)

1 tablespoon Italian seasoning

(You can use store bought Italian seasoning,however i make my own and store it my pantry,recipe on the link below)

home made Italian seasoning

1 tablespoon olive oil


Clean your thighs and pat them dry

Separate the thighs from the drums

Coat the  chicken with olive oil first then season generously

Heat up your oiled cast iron skillet or a nonstick pan to medium high

Place your chicken skin side first in the pan

Cook undisturbed until the skin fat has rendered down and the skin has browned up before flipping

Keep up flipping the chicken on a medium high for 25 to 30 minutes until it’s done.The meat close to the bone should be 74℃ and over or if its juices run clear.
