I have done my ribs this way before and they never disappoint,then this thought crossed my mind,if it works well on pork,it must also go well with chicken,I needed no second thought on this and immediately tried it out,well the rest as they say is history.
The chicken came out so good,tender moist,juicy with a perfect balance between sweet and spicy,this is hands down one of the best chicken I have made and I will be making it again.
It’s a simple recipe done in the comfort of your oven then finished of with a simple homemade barbecue sauce.
Try out this chicken barbecue recipe and be sure to get all the raves on the dinner table.
INGREDIENTS
1 whole chicken
2 tablespoons olive oil
4 tablespoons barbecue rub
Below is a recipe for my home made barbecue rub that goes well with almost anything barbecue
You can also bring together a quick rub my mixing together
2 tablespoons paprika
2 tablespoons brown sugar
1 teaspoon cumin
1 teaspoon black pepper
1 teaspoon chilli powder
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
DIRECTIONS
Start off my spatchcocking your chicken,I went ahead and split mine into two halves.
Apply the olive oil allover the chicken and generously season with the rub
Cover this with cling film and let it marinate for 30 minutes or overnight
When ready,place your chicken into a pre heated oven at 160℃ in the 2nd lower rack
Let this slowly cook for 1 hour,if you notice your chicken drying up you can go ahead and spray it with apple juice or water.
As it gets cooking,bring together your barbecue sauce
INGREDIENTS
1/4cup ketchup
1 tablespoons brown sugar
4 tablespoons apple cider vinegar
1 tablespoon molasses or honey
1 teaspoon black pepper
1 teaspoon minced ginger
1 teaspoon minced garlic
1 teaspoon minced onions
DIRECTIONS
Heat 1 teaspoon olive oil in a sauce pan and fry your onions ginger and garlic until fragrant
Mix in all your remaining ingredients
Bring this to a boil,and let simmer for 5 minutes
And there you have you home made basic barbecue sauce.
After an hour,take your chicken off the the oven and apply barbecue sauce on them,I like mine with a thin barbecue coating however coat as you please
Don’t mind the char, it’s caramelized sugars,extra flavour
Take this back into the oven and cook for a further 7 to 8 minutes
When done let it rest for 10 minutes covered in foil before serving

Ive just tried this today as the first oven recipe of 2018 and it came out b-e-a-u-t-i-f-u-l..i added some lemon juice just for the fun of it and used white vinegar instead of apple cider since i didnt have that but it still came out great..
