Being the most popular vegetable in the world,potatoes are consumed by many allover,they can be bland and boring but are also amazing in soaking up flavours.
This is a recipe that I stumbled upon as I was preparing my barbecue chicken.
It happened that I had on me some leftover rub that I usually use on my chicken,beef&pork.So I asked myself,why not?
I tossed my potatoes in the rub mix and gave them a quick bake in the oven,out came out one of the most flavourful potatoes I have ever had,crispy on the outside and pillow soft In the inside,they had a perfect balance of spiciness,heat&sweet.
This are perfect sides whenever you want to host a barbecue or as a main dish for those potato lovers out there.
Simple to prepare and in 35 minutes they are done.
4 large potatoes
2 tablespoons olive oil
2 tablespoons barbecue rub
I make my rub mixture beforehand in bulk and store it for use when called upon,it’s so good and goes well with anything pork,beef or chicken recipe on the link below
You can make your own rub for use on this recipe by bringing together
1 tablespoon paprika
1 tablespoon brown sugar
1/2 teaspoon cumin
1/2 teaspoon black pepper
1/2 teaspoon chilli powder
1/2 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Wash your potatoes thoroughly using clean running water,you can go ahead and peel your potatoes but I love mine skin on for that extra crisp and crunch
Chop up your potatoes into wedges
Season your potatoes with olive oil and the rub mixture,toss in a Bowl to evenly coat
Arrange your wedges on a wire rack or baking tray lined with aluminum foil
Set this in a preheated oven at 200℃ and bake for 35 minutes.
Flip them over when they are halfway done
After 35 minutes,take your potatoes out of the oven and serve them hot
