I love the sweet bakery smell my kitchen has whenever I  bake muffins,bread and all sorts of pastry,it’s always nostalgic bringing back childhood memories as I stood watch over the oven on the cake my mum was baking. 

I have tried my hand on Home Made Banana Bread but these muffins are just heavenly.

You can bring this delicious,moist and full of banana flavour muffins in just under 40 minutes.They are simple to prepare,fun and something you can involve your kids in preparing.Growing up,mixing cake batter was my favorite bit as some of the batter found it’s way into my tummy.

This recipe calls for a few pantry ingredients,incorporating the potassium rich banana and no,this muffins don’t end up heavy,chewy and doughy from the banana.It’s also cheap to prepare making it one of my favorites.

Prep time  10 minutes

Cook time 15 minutes


1 1/2 cups all purpose flour

3/4 cup sugar

1/3 cup melted butter

3 mashed very ripe bananas

1 teaspoon baking soda

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon vanilla extract

1 egg


Mix all your dry ingredients in a Bowl

(Salt,sugar,baking powder,baking soda&flour)

In a separate bowl combine the remaining wet ingredients

(Vanilla extract,bananas,egg&butter)

Slowly fold in your dry ingredients into your wet ingredients until consistent,do not over work your batter,once all the dry ingredients have incorporated stop

Pour the batter into a greased muffin tray or into paper cups,I did half and half of each

Bake this in a preheated oven at 175℃ for 15 to 20 minutes,a toothpick inserted should come out clean,that’s a sign they are perfectly cooked.

When done take them out of the oven and let them cool on a wire rack

This are best served warm and fresh
