Woke up craving myself muffins for beakfast,how I ended up baking bread is unknown to me and I have no regrets,this banana bread was out of this World amazing in every way possible.
I hadn’t baked bread for quite sometime and this reminded me again why I love baking my own bread.
Nothing can compare to bread fresh from your home oven,bread that you know what you put inside it and have control on what goes into your bread.I love the sweet bakery smells my house has anytime I am baking,the satisfaction is just unimaginable.
I have made banana bread before but this was the best ever,crusty on the outside,moist and flavourful in the inside,this went down well with my warm cup of milk,what other way to beat this cold mornings weather.
If you love anything bananas like I do,then this one is for you,simple and easy to bring together,once you get the hang of things,you can start making this recipe your own by mixing in your favorites like nuts and even crispy bacon,who doesn’t love bacon?
PREP TIME: 10 MINUTES
COOK TIME: 65 MINUTES
MAKES : 1 LOAF
INGREDIENTS
2 cups all purpose flour
1/2 cup brown sugar
1/2 cup white sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup mashed banana
1/3 cup butter milk
1/2 cup vegetable oil
1 teaspoon vanilla essence
2 eggs
DIRECTIONS
In a large Bowl mix in all your dry ingredients
(flour,sugars,salt,cinnamon,baking soda)
In a separate bowl mix in all your wet ingredients
(Bananas,oil,buttermilk,eggs and vanilla essence)
(If you don’t have buttermilk,mix in one part sour cream with one part milk.Another way is to mix in a teaspoon of lemon juice into one cup milk and let it sit for 5 minutes.Also you can water down natural yoghurt and use it for this recipe)
Gently mix in your wet Ingredients into your dry ingredients until consistent and no dry ingredients are visible.Do not over mix
Pour in your batter into a greased bread tin
Put this in a preheated oven any 165℃ and bake for 65 minutes,or until a toothpick inserted inside comes out clean.Take it out when done
Let it cool down for 10 to 15 minutes in the tin then take it out of the tin,this will help it not fall apart

I enjoyed my banana bread with warm milk tucked inside my duvet over TV.Doesn’t get any better than that.

How can I achieve a smooth top like yours. Mine cracked a bit.

The cracking is normal but can also mean that the temperature was too high so it rose too quickly,but that shouldn’t scare you

It’s not the same but mala can be used as a substitute as they all work using the same principles
