Peri Peri is a spicy,savoury and tangy chilli barbecue sauce from Portugal but popularized around the world by the South African franchise ‘Nando’s’.
Peri Peri goes well as a chicken or pork marinade and is most flavourful when grilled over an open fire.
I make Peri Peri sauce beforehand hand store it in the refrigerator for when I need it,this saves me time and cleanup time when preparing your meal.Home made Peri Peri Sauce sauce is also healthier,devoid of any preservatives or artificial flavourings as you have control on what goes into your food.
Chicken breasts are notorious for being dry and bland,this to me is a blessing in disguise as they are best when it comes to absorbing flavours.Marinating them in the spicy Home Made Peri Peri Sauce makes them tender,moist and bursting with flavour.
Versatile it is in that it can be served as a meal on it’s own with sides of your liking.I went with grilled corn as I find that that the sweetness of the corn marries well with the spicy kick from the chicken,this will also go down well with a side of baked potatoes,fries and can can be served cold in your favorite salads.
INGREDIENTS
- 2 large chicken breasts
- 1/4 cup Peri Peri sauce
Home made Peri Peri sauce
- 3 tablespoons olive oil
- 1 teaspoon paprika
- 1 tablespoon chopped red onions
- 2 red chilli peppers(more or less according to your heat level)
- 1/2 red jalapeno pepper
- 1 teaspoon salt
- Pinch of black pepper
- garlic cloves
- 1 teaspoon lemon juice
- 1 basil leaf
- 1 teaspoon dried oregano
- 1 tablespoon red wine vinegar
DIRECTIONS
Mix in all your marinade ingredients in a blender until smooth and consistent.
Wash clean and pat dry your breasts
Using a rolling pin,gently hammer your breasts using a rolling pin until even and flat.This will ensure for even quick cooking while allowing for the marinade to be absorbed while tenderising the breasts.
Set this in the refrigerator to marinate for 30 minutes or overnight.
Take your chicken of the refrigerator and let it come to room temperature before grilling
Heat up your slightly greased griddle pan over medium high heat and place your chicken breasts on
Cook undisturbed until done around 4 to 5 minutes then flip over
Let this cook for a further 4 minutes then take it off the heat.
Let your breasts rest before serving
