Pasta is light,yummy and goes well with almost anything you can think of.
This recipe serves for a well balanced diet,packed with vitamins,carbohydrates,proteins and healthy oils,this simple yet delicious recipe delivers a complexity of flavours as everything is brought together in one pan.
There is something special about food brought together in one pan,the different flavours inter marry with each other and the results are heavenly.
This is my go to meal when I want to bring together a quick healthy meal that is light and provides me with all my nutritional needs for my day.This will take you less than 30minutes to prepare,simple but packed with flavour and nutrients.

- 200 grams spaghetti
- 300 grams chicken
- 3 ripe tomatoes
- 2 cups spinach
- 1/4 cup chopped basil
- 2 tablespoons olive oil
- 3 garlic cloves
- Salt&pepper to taste
Cook your pasta according to package instructions until ‘al dente’,this is by taking it off the boiling water 2 minutes to its cook time.Also reserve about half a cup of the pasta water for later.
Slice your chicken into bite size cubes or strips,season well with salt and pepper.I added some of my Home Made Italian Seasoning for extra flavour
Add in the spinach and cook until they start wilting
