Crunchy buttery bread with a cheesy creamy oozy inside,that is my type of sandwich.
I love grilled cheese sandwiches,you can bring them together at a moment’s notice using leftovers or any ingredients that you have in hand.
I have made sandwiches using leftover pork,chicken,pulled beef,avocado,tomatoes it really is open to your imagination.
I had some leftover Home Made Almond Basil Pesto from my Basil pesto pasta recipe,slathered it on my bread,topped it with a mixture of cheddar and mozzarella cheese,in no time I had a delicious cheesy crunchy pesto sandwich,this were delicious taking me less than 15 minutes to prepare.
This goes down well as breakfast,something to snack on during the day or carried on the go as packed lunch for you or the kids to take to school.
You can use any melty cheese of your liking,I prefer a mozzarella cheddar blend but use your favorite cheese for this.
PREP TIME:10 MINUTES
COOK TIME:8 MINUTES
INGREDIENTS
4 bread slices
1 tablespoon butter
1/2 cup cheddar cheese
1/2 cup mozzarella cheese
If you don’t have pesto in hand you can use store bought ones or make your own like my home made Almond Basil Pesto
ALMOND BASIL PESTO
ingredients
3 cups fresh Basil
1/2 cup almonds
2 garlic cloves
1/2 cup olive oil
Salt&pepper
In a food processor or blender,bring together all the ingredients adding in the olive oil last until the pesto is well blended and consistent
DIRECTIONS
Spread butter on one side of your bread
Flip over and slather pesto on the un buttered side
Generously spread the cheese over the bread,cheddar on one slice and mozzarella on the other
Bring together your two slices
on a medium high heat,heat up your pan and when hot enough place your sandwiches into the hot pan
cook until brown on one side and the cheese starts to melt.Flip over
When well browned on both sides and the cheese is all oozy take off the heat,slice into two and serve
