Bright,colourful,crunchy,healthy and delicious is my sweet and tangy honey lime coleslaw.
There are different ways of making slaw out there,most have mayonnaise as a key ingredient in them,I however was in need of a healthier version so I settled for a honey and lime salad dressing.
This slaw is packed with vitamins,exciting flavours and colours to liven up anything you serve it with.Be it your meats,burgers,sandwiches or when hosting a barbecue,my honey and lime coleslaw will for sure get you the raves on the table.
I used a mixture of red&white cabbages,carrots,red onions and an array of colouful sweet bell peppers.this is what was available and you can use any of the sweet bell peppers or one of the cabbages,I always prepare my salads with what is available,fresh and cheap at the moment.Fruits and vegetables that are on season makes for the sweetest salads.
My honey lime slaw is easy to bring together and can be made in advance,stored in the refrigerator ready for the next day.I find slaw tastes better when left to sit in the refrigerator overnight as the flavours mingle and marry with each other.
INGREDIENTS
1 cup white cabbage
1 cup red cabbage
1/4 cup chopped coriander
3 carrots
1 medium red onion
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
2 tablespoons lime juice
1 tablespoon honey
2 tablespoons olive oil
Salt&pepper
DIRECTIONS
using a sharp knife,thinly slice your vegetables.I prefer using a knife as I can control the size of my slices as I personally like my veggies sizable as opposed to being finely shredded
Bring this together in a large mixing bowl
Combine the olive oil,honey and lime juice and drizzle over your slaw.season with salt and pepper to taste,toss and serve.
