Avocado has to be my favorite super food,it transforms bland normal everyday meals into tasty savory dishes, slather avocado on anything and I will eat it.

This recipe jazzes up your leftover rice into a creamy zingy healthy meal,easy to prepare,filling and packed with nutrients and flavour.I went with leftover rice for my recipe, however you can use freshly cooked rice left to sit until cooled down,I used white rice as that is what I had leftover in my refrigerator,use brown rice for a healthier version,brown rice will hold the avocado much better.

Avocado Cilantro RiceI love the creaminess and rich flavours from the avocado paired with the freshness from the cilantro,the lime adds a zing that leaves you asking for more.

Avocados are rich in fiber,minerals and vitamins and have various cardiovascular health benefits and are good for weight loss due to their satiating nature

Simple and filling,this is definitely a go to meal when you want to prepare something healthy and quick.

This can also be served chilled as a salad or as an appetizer when hosting.

My avocado rice also goes well with your meats,serve it alongside beef stew and have your mouth in flavour heaven.

Pair this with a stir-fry of choice for a perfectly balanced diet.My avocado cilantro lime rice served alongside veggie stir-fry is a guaranteed heaven for every vegan out there.


  • 3 cups  rice
  • 2 medium avocados
  • 1 lime
  • 2 garlic cloves
  • 1/4 cup cilantro
  • Salt&pepper to taste


Warm up your rice on a wok or pan to get rid of excess moisture until grainy.Cold rice is best for this recipe.In a bowl mash your avocado using a potato masher or a fork

Cold rice works best due to its low moisture content and almost crisp nature when it’s warmed up over high heat.This also is the reason it’s advisable to use cold rice when preparing anything fried rice

Chop up your cilantro and add into your avocado,mince in your garlic,squeeze in your lime and season with salt and pepper to taste

Using a fork bring the mixture together until creamy and consistent

In a large bowl,combine your rice and avocado mixture,mix until all the grains of rice are kissed with creamy avocado goodness

Serve and enjoy.This went down well on its own.You can serve this as a side or as an appetizer when hosting,this for sure will be a crowd pleaser and will get you all the raves from your guests.
