Asian Cucumber Salad

My Asian cucumber salad is easy and simple to prepare,it can be served as a side on your table,I find this goes so good with pilau also. For those people managing your weight, then this one here is for you, carry it at work and snack on them whenever you feel like munching something, however my Asian cucumber salad is best enjoyed as a condiment in burgers and sandwiches.

Ginger and garlic are a match made in heaven and their flavours do really marry well in this salad, the rice wine vinegar and the lemon juice provide for the acidity while the honey balances off the heat from the chillies, soy sauce is there bringing everything together for an exotic taste and feel to it.

  • 3 large English cucumbers(4 cups)
  • 1 lemon
  • 4 tablespoons rice wine vinegar
  • 2 tablespoons honey
  • 2 tablespoons toasted sesame oil
  • 2 tablespoons toasted sesame seeds
  • 1 teaspoon ginger
  • 1 teaspoon garlic
  • 1/4 cup coriander
  • 1/4 cup red onions
  • 2 red chillies
  • 1 teaspoon chilli flakes

Rice wine vinegar is milder tasting than most vinegars and can easily be sourced from the Asian section in your supermarket

Thinly slice your cucumbers, red onions and seeded chilli peppers. In a large mixing bowl add in your sliced veggies along with all the other ingredients apart from the sesame oil and seeds

Mix this well and season with pepper,do not season with salt as the soy already has some salt in it.

Drizzle in the sesame oil and seeds tossing gently to combine well

Refrigerate as this taste even better when left to sit as the flavours intensify and intermarry with each other
