Sticky sweet caramelized outside with a pillow soft inside are my roasted honey cinnamon sweet potatoes.You might be thinking,sweet potatoes are already sweet why make them even sweeter.Well I also thought about that until I tried this out,it was flavor heaven.
The sweet from the potatoes and the sweet from the honey contrast and complement each other in this meal.The cinnamon adds in sweet aromas and warmth to the sweet potatoes.Balsamic vinegar cuts through the sweet for a bit of tang coating the sweet potatoes in dark delicious goodness.
This won’t take long to prepare,all you do is pop them inside your oven and coat them with honey and vinegar just as they are about done.
Enjoy this with ketchup or a dipping sauce of choice.I went with a spicy mango avocado dip and the heat from the sauce balanced the sweet of the caramelized potatoes
- 2 large sweet potatoes(4 cups)
- 1/4 cup honey
- 1 tablespoon balsamic vinegar
- 2 tablespoons olive oil
- 1 teaspoon cinnamon
Peel and chop the sweet potatoes into bite size cubes
