BARBECUE CHICKEN DRUMSTICKS

Beer,coleslaw and barbecue is how every chilled out weekend should look like.Nothing beats barbecue done low and slow on the grill over an Open fire,chicken roasted over hot coals as the smoke and heat works slowly into the bird.

But let’s face it,modern day apartment life makes it next to impossible to operate an Open fire grill and our oven is the closest we can get to that.

My barbecue chicken drumsticks are done in the oven and are out of this world amazing.You really have no excuse not to throw down a barbecue at your place,all you need is your oven and I will guide you through the rest.

My barbecued chicken drumsticks are marinated in herbs and spices,baked in the oven and finished off by being smothered with sauce.I always make my own barbecue sauce and it’s what I used for this recipe,this is hands down the best darn barbecue sauce you will ever taste.

This is a simple recipe to whip up and will take you less than 45 minutes.Pair this with a side of choice in chips or wedges and you have yourself a meal fit for a king.I love my barbecued chicken paired with a simple salad,slaw and baked beans,just thinking of that gets me hungry.

So next time you want to host a barbecue,be sure to try out my barbecue chicken drumsticks,finger licking sticky sweet and spicy heaven.

INGREDIENTS

  • 1/2 kg chicken drumsticks
  • 1 lime
  • 2 garlic cloves
  • 1/2 tablespoon paprika
  • 1/4 teaspoon thyme
  • 1/4 teaspoon oregano
  • 1/2 teaspoon cumin
  • 2 teaspoons olive oil
  • 1/4 cup barbecue sauce

DIRECTIONS

Wash clean and pat dry your drums

In mixing bowl,mix in your chicken,minced garlic,juice of one lime and all the remaining herbs and spices saving the barbecue sauce for later

Let this marinate for 30 minutes or overnight for maximum flavours.When ready to bake,take your drums out of the refrigerator and let them come to room temperature before placing them on a baking tray lined with greased aluminum foil

Bake this in your pre heated oven at 200℃ for 30 minutes flipping halfway through

Brush over your barbecue sauce covering every inch of the chicken

INGREDIENTS

1/4cup ketchup

1 tablespoons brown sugar

4 tablespoons apple cider vinegar

1 tablespoon molasses or honey

1 teaspoon black pepper

1 teaspoon minced ginger

1 teaspoon minced garlic

1 teaspoon minced onions

DIRECTIONS

Fry your onions ginger&garlic until fragrant,mix in the rest of the ingredients and bring to a boil then simmer on a low for 15 minutes 

Bake your barbecue sauce coated drums for 10 more minutes until caramelized and sticky,take them out of the oven as they will burn quick if let to sit in for too long.You can repeatedly brush over the sauce as the drums are baking adding extra layers of flavours
