During mango season I prepared my spicy fruity mango habenero barbecue sauce and it has since been sitting in the refrigerator until recently.I was craving myself something sweet and spicy at the same time and I remembered I had made this barbecue sauce a while back.

I do love love making my own sauces and especially barbecue sauces.Store bought sauces can be good and convenient at times, but it ends there. They are filled with preservatives and lots of artificial flavourings.I love home made sauces as they have personality and I can adjust the flavours to suit my palette.

I used my Home Made Mango Habanero Barbecue Sauce on these drumsticks and they were out of this World delicious

Make this sauce at home and surprise yourself with unique fruity Caribbean flavours that will go with most meats be it pork, beef or poultry

I marinated my chicken in mango juice/pulp,garlic,lime juice and habenero chillies. This ensures for aromatic flavourful juicy and tender chicken .

Baked in the oven then finished off with barbecue sauce, this is one of the best barbecue chicken you will ever have.

  • 1/2kg chicken drumsticks
  • 1/4 cup mango habenero barbecue sauce
  • 1/2 ripe mango
  • 1 lime
  • 2 garlic cloves
  • 2 teaspoons olive oil
  • 1 habenero chilli
  • Salt&pepper to taste

Wash clean and pat dry your chicken

Season well with salt pepper and olive oil

In a blender or food processor, blitz your mango, lime juice, garlic cloves and the de seeded habenero chilli

Pour this marinade in the bowl and massage well to coat the drums.cover and let it marinate for 30 minutes or overnight in your refrigerator

Take your drums and let them come to room temperature before baking.Line your drums in a baking tray lined with greased aluminum foil or on a rack in your oven

Bake this in a preheated oven at 200℃ for 30 minutes flipping halfway through the baking time

Brush over your Home Made Mango Habanero Barbecue Sauce generously on your drums

Back into the oven they go,bake for a further 10mins at around 160℃ coating with the remaining sauce from time to time.Take out when done, the oven shouldn’t be too hot as the sauce will burn
