Forget about Barbecue Sauce,rub is the foundation of any barbecue,it is the base flavor in which whatever you are throwing down will be cooking in absorbing its complex flavors for hours on end.
This is my basic go to rub for anything Barbecue,loaded with paprika,brown,sugar cumin garlic and other spices,this rub is the perfect balance of heat,sweetness and earthy flavors.
This rub and pork is a match made in heaven,ribs prepared using this rub will always be a winner.I do enjoy takeout ribs from time to time but always end up disappointed by their lack of depth in flavor.They end up tasting like boiled ribs dipped in barbecue sauce,that layer of flavor that lacks is what a rub brings to the table.
I have tried this on chicken and beef and it made for good eating.If bold enough season your wedges with this rub before baking and serve them alongside your barbecue roast,absolutely delicious.
Make a lot of these and store it up in your pantry in an air tight container ready for your next barbecue.
INGREDIENTS.
- 2 cups brown sugar
- 2 cups paprika
- 4 Tablespoons salt
- 4 Tablespoons garlic powder
- 4 Tablespoons freshly ground black pepper
- 2 Tablespoons chilli powder
- 2 Tablespoons cumin
- 2 Tablespoons coriander
- 4 Tablespoons onion powder
Add in a bit of cayenne for an extra kick or halve the amount of Chilli in the recipe if you can’t handle a bit of heat.
DIRECTIONS
In a mixing bowl add in all the ingredients and mix together breaking all the lumps from the brown sugar unti fine.
That’s it you have your Barbecue dry rub ready,store it in an airtight container and will be good for up to 4 months if stored In a cool dry place

Now if you can do a black peppercone sauce and show me, coz mine keeps backfiring and I dont understand what I do wrong everytime I make steak with mashed potatoes and black pepper sauce so I keep making a different gravy on the side. I will really appreciate
