Wonderfully fresh and delicious,this simple to prepare salad comes packed with flavor and nutrients.
This was largely inspired by my recent trip to the Uk.I had it served in a restaurant with roasted beets and goat cheese,it was amazing.I like the bite that comes from raw beets so I skipped the roasting bit and left out the cheese as it’s just too expensive at the moment.
This salad speaks sunshine to me,oranges in there are a game changer,the sweetness from the Orange balances well with the peppery flavors of the arugula ,I love oranges and this salad is a win win for me.I also threw in avocado for a creamy touch,what can’t the avocado go well with?

This salad is light to the tummy and will be perfect served with just about anything.Add in some shredded chicken and you have a healthy post workout dish to die for.I used arugula as the leafy greens for my salad,however spinach and other greens will work just fine.
I used a simple vinaigrette consisting of olive oil,vinegar,infused with lime juice and orange zest.This brought my salad to life.
- 4 cups arugula
- 1 beet root
- 2 large oranges
- 1 avocado
- 1 carrot
- 2 lemons
- Salt&pepper to taste
Vinaigrette
- 3 tablespoons olive oil
- 1 Tablespoons vinegar
- 1 teaspoon orange zest
- Juice of half a lemon
(Combine all th ingredients in a small jar and shake for a simple quick vinaigrette)
DIRECTIONS
Wash clean and dry your arugula,do the same to the remaining fruits and vegetables.
Thinly slice your beets,carrots,peel and separate your oranges into segments
Bring all this in a large bowl
The beets will stain the salad so toss just as you are about to serve.Also throw in the avocado at the very last moment to avoid them oxidizing.Squeeze over half a lemon and pour in the salad dressing,season with Salt&pepper and toss to combine
Serve

You should use navel oranges for salads (we have those in Kenya). There is a technique for prepping it too.
