Creamy delicious goodness,with no cream,is my mouth watering spicy butternut soup.This will be perfect to warm you up during the cold days or served as an appetizer before your main meal.

This soup is simple using basic pantry ingredients,but the flavor is unmatched by any.I can confidently say it’s the best butternut soup I have ever had.

I ain’t a huge butternut fan,but by roasting them alongside onions then brought together with different spices in a pan before adding in the stock really brings this soup to life.


  • 1 large butternut squash 
  • 3 medium sized onions 
  • 3 cups vegetable stock 
  • 1 tablespoon olive oil 
  • 1 teaspoon cumin
  • 1/2 teaspoon coriander 
  • 1/4 teaspoon nutmeg 
  • 1 teaspoon turmeric 
  • 1/4 teaspoon Chilli powder
  • Salt&pepper to taste 


wash and peel your butternut squash.Proceed to chop up into equal chunks.Quater your onions.Bring all this together in a bowl,mix in the olive oil and season well with salt and pepper 

Spread this in a baking dish evenly or on a baking tray lined with greased aluminum foil 

Bake this in a preheated oven at 200 degrees centigrade flipping them halfway until cooked,this should take 30 to 35 minutes.Overcooking the squash will ruin our soup.

When done take out of the oven

On a large skillet,pour in our squash.Proceed to season with cumin,chilli,coriander and nutmeg 

Over medium high heat,fry up your squash until the spices are cooked and fragrant.Add in 1 Cup vegetable stock and bring to a boil.

Take off the heat and blend until smooth and consistent.You might want to do this batches to avoid the hot soup exploding in your blender.

Pour the soup back in a pot,add in the remaining stock,bring to a boil then simmer.Check for consistency and add more stock if you prefer yours runny.I like my soup thick I saw no need for that.

Serve hot in a bowl.This would be perfect served alongside garlic bread,heaven right there I tell you
