Creamy delicious goodness,with no cream,is my mouth watering spicy butternut soup.This will be perfect to warm you up during the cold days or served as an appetizer before your main meal.
This soup is simple using basic pantry ingredients,but the flavor is unmatched by any.I can confidently say it’s the best butternut soup I have ever had.
I ain’t a huge butternut fan,but by roasting them alongside onions then brought together with different spices in a pan before adding in the stock really brings this soup to life.
- 1 large butternut squash
- 3 medium sized onions
- 3 cups vegetable stock
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1/2 teaspoon coriander
- 1/4 teaspoon nutmeg
- 1 teaspoon turmeric
- 1/4 teaspoon Chilli powder
- Salt&pepper to taste
Spread this in a baking dish evenly or on a baking tray lined with greased aluminum foil
When done take out of the oven
Take off the heat and blend until smooth and consistent.You might want to do this batches to avoid the hot soup exploding in your blender.
Pour the soup back in a pot,add in the remaining stock,bring to a boil then simmer.Check for consistency and add more stock if you prefer yours runny.I like my soup thick I saw no need for that.
Serve hot in a bowl.This would be perfect served alongside garlic bread,heaven right there I tell you
