It’s said only the pure at heart can make good soup and this my curried cauliflower red pepper soup certainly is the way to my heart.

Healthy,fragrant and delicious,this soup is completely vegan without missing out on the creamy texture we all love in hearty soups.

Cauliflower has tons of health benefits most notably being an anti inflammatory,good for our brain,heart and its cancer fighting capabilities.All said,cauliflower isn’t the best tasting vegetable out there and it takes lots of convincing to push it down my throat.

Roast cauliflower alongside onions,add in roasted red bell peppers with a blend of spices and you have a delicious warm fragrant soup that you can’t have enough of.

Red bell pepper adds in flavor and much needed sweetness and body to the soup complementing the garlicky flavors

This is a simple recipe to bring together and is a good way to get the kids to eat their cauliflower.This is perfect with the cold,and is my go to soup when I need something warm and comforting 


  • 1 medium cauliflower 
  • 3 red bell peppers
  • 2 red onions 
  • 5 cloves garlic 
  • 4 cups vegetable stock 
  • 1 tablespoon paprika 
  • 1 teaspoon garam masala
  • 1/2 teaspoon coriander 
  • 1/2 teaspoon cumin 
  • 1/4 teaspoon thyme 
  • 2 tablespoons olive oil
  • Salt&pepper to taste 


Start by roasting the bell peppers in order to peel the skin of them.Line a baking tray with aluminum foil,halve your peppers.Grease the tray and place your peppers cut side down on the tray

Set your oven to broil and cook the peppers until the skin begins to charr and black spots form on the skinCover this up with foil and let sit aside for 5 minutes to allow for easy peeling.

Peep the skins off the peppers after 5 minutes 

Separate your cauliflower into florets and quarter your onions.In a baking dish mix in the cauliflower,onions and garlic .Mix in one tablespoon of olive oil and season well with salt and pepper Bake this in a pre heated oven at 200 degrees Celsius for 30 minutes,flipping halfway through.Take out of the oven when done.

In a pan heat one tablespoon olive oil and fry your cauliflower,broccoli,onions,garlic and chopped red bell peppers.

Add in the remaining spices and cook until fragrant Add in 1 Cup vegetable stock and bring to a boil.Pour in your cauliflower in a blender and blend until smooth and consistent.Pour back into your pan,add in the remaining stock and season with salt and pepper to taste.Bring to a boil then simmer for 20 minutes.Check for consistency and add more stock if you prefer your soup thinner.Take off the heat and serve hot
