It’s cold outside,sub 10 degrees centigrade it is today yet the shine is at its brightest.Tucked warm in my duvet coffee in hand with the heater not very far away.I start going through my phone’s gallery,trying to force some nostalgia on me as it can get lonely sometimes when you are away from home.
I am in mother Russia,been here for almost two weeks and everything about this place is beautiful,st Petersburg is where I am now.It’s a beautiful city if not the most beautiful one I have visited in my many travels.Everything about this place is just spectacular,the architecture their history and the best part is their museums,they are literally allover the place and you have to come visit them by yourselves as I can’t put them all down in writing.
I am loving everything about this trip apart from the weather,and let’s say the food.Well not all the food is bad but I expected a little bit more.There are nice restaurants in St. Petersburg with cuisines from allover the globe.Russia itself is a world on its own as it stretches far and wide and such is their food,it’s really hard to pin down and say this is what they eat here.The north for example is different from the south or eastern parts of Russia,let me not bore you guys out with history as we are here for the food.I had some authentic Russian foods and I have never had so much soups bread and potatoes in my life.It was an experience on its own and a story for another day.All I can tell you is if you come here expecting good cheese,you will be disappointed.
So I was going through the photos in my phone and it hit me I have this amazing fish recipe that I haven’t shared with you,I mean I thought I had but they were just sitting pretty in my gallery,popcorn fish it is.we all have heard or had popcorn chicken before but my popcorn fish is the game changer.Made using Amaize meal flour so it’s crunchy with a savory honey hoisin coating with a little bit of kick in them.Absolutely delicious.
Pieces of fish are seasoned,lightly coated in flour,deep fried then kissed in a sweet savory honey hoisin sauce.I would normally use wheat flour but I have been experimenting of late with Amaize meal and I like the crunch and nutty flavor it adds.
For my fish I went with Nile perch,I would use tilapia but of late I am loving this type of fish more,I find it packs lots of flavor without being too fishy.Any firm white fish would do you good.
The secret is to season your fish properly before anything coz that’s the only time you can get proper flavor onto the fish.I went for an array of spices with a little bit of Chilli in there as I like some kick in my fish.
Always season your fish before the breading as it’s the only window you have to get flavors into the fish
The first coating is to allow for the egg wash later to be able to hold onto the fish.
It’s always advisable to season your flour with at least salt and pepper.However you can go in and add in whatever spices you fancy.It will go a long way in transforming how your final product will taste.Its a little trick that I use all the time.
After the second coating,it’s always advisable to let your fish rest for about 10 minutes to allow the coating to set on the fish.
Also it’s worthwhile pointing out that it’s key to have your fish cubed into almost equal sizes.Not only does it look good but allows it to cook evenly.
For the sauce to go along with the fish I used 1 part honey to half part hoisin with a sprinkle of Chilli if you prefer yours a little bit spicier.
The original popcorn has no sauce to accompany it.That way you have it crunchier but I am not one to do the norm.
This is a simple recipe to whip up perfect as a game night food or snack.Kids will also love this as well,just go easy on the Chilli.
- 750g Fish fillet
- 11/2 cups Amaize meal flour
- 2 Eggs
- 2 garlic cloves
- Juice of one lemon
- 1 teaspoon crushed ginger
- 1 tablespoon paprika
- 1 teaspoon garlic powder
- 1/4 teaspoon Chilli powder
- Salt&pepper to taste
- 1/2 cup honey
- 1/4 cup hoisin sauce
- Wash and pat dry your fish fillet.Cube it up into bite size cubes.
- Season your cubes with Salt&pepper.mix in the spices and combine till evenly distributed.
- In a bowl season your Amaize meal flour with salt and pepper.
- Coat the fish lightly with the flour shaking off any excess flour.
- Dip your lightly coated fish in your egg wash then back into your seasoned flour.Set them on a wire rack and let them rest for a few allowing the coating to set.
- Heat up oil in a deep pan until it just starts to bubble.Deep fry your fish in batches avoid overcrowding the pan.
- You will know they are ready once they are golden brown and start to float.Take them out and let them drip off any excess fat.
- Mix together your honey and hoisin sauce and heat it up in a pan.
- Add in your fried popcorn fish and toss to coat with the sauce.
- Garnish with with spring onions and sesame seeds.Serve hot.
