My apple mango salad is everything there is to be loved in a salad, and you will be falling head over heels in love with it.
I did two salads with my last order of groceries and my Green Mango Salad has been a hit with you guys.
Now is when things turn from sour to sweet, we will be using ripe mangoes for this one,drooling already?
Mango season is here with us and it will be a pity for it to pass you by without milking all the goodness out of these favorite seasonal fruits.
Fresh succulent and juicy,the mango is the king of all fruits, the GOAT of all fruits and it’s next to impossible to come across someone who doesn’t enjoy mangoes.
This salad was brought together using my Peanut Salad Dressing .If you haven’t tried my peanut salad dressing yet you definitely are missing out.
Also delivered were different other fruits and veggies all that went into my salad bowl.
Sweet bell peppers, I love how fresh crisp and firm these taste.They add crunch, crispness and flavor into the salad.
Also it can’t be an apple mango salad without the Apple.Apples are tricky and oxidize quickly,so as soon as you chop up the apples,squeeze over fresh lemon juice on them before adding it into the salad.
Also it’s always advisable to add in the apple last,just as you are about to dig into it.
We all love that feeling of biting into a chilled piece of cucumber,Absolutely refreshing,there was no way I was leaving it out.
I love the color texture and crunch carrots bring into my salads.Whenever you are including carrots in my salads, I do prefer to jullien them making them easier to eat without breaking your jaws.
If you hate the taste of raw onions, feel free to leave it out, but there is just something about onions and mangoes that just go well together.
This reminds me of my Green Mango Salad.Mangoes really are versatile,be it raw or ripe,it’s a fruit for everyone,and I will continue sharing fantastic recipe and ideas on how to use the mango in your cooking.
You can always soak your onions in vinegar or lemon juice with a bit of salt, this will help in getting rid of that pungent, oniony, smell we love to hate.
Spring onions and fresh lime juice, just for the freshness.I loved how a squeeze of lime juice cuts through the salad and you could taste it with every bite.
Added in red cabbage for color and crunch.Whenever I am making salads I always try to make them as colorful as possible, and appealing to the eye.
I normally would usewhite cabbage but I was feeling fancy and with everything being delivered on my doorstep via Glovo why not go all out?
Feel free to substitute the red cabbage with a white one.
Fresh mint and coriander alongside an array of nuts in, peanuts, sunflower seeds and pumpkin seeds.
Use any seeds and nuts you have laying around, doesn’t really matter.
Another tip Whenever you are making a salad try and get your fruits and veggies chopped up into almost equal bite size portions.
That way, you end up getting everything in one bite.Also hard veggies like carrots should be julienned to make them easier to consume.
You can handle everything using your kitchen knife,however a julienne cutter would make work easier, it’s what I Use most of the time.
- 3 cups mangoes
- 2 cups apples
- 1 teaspoon fresh minced ginger
- 1 cup red bell pepper
- 1/2 cup yellow bell pepper
- 1/2 cup green bell pepper
- 1/2 cup red onion
- 1 cup cucumber
- 1 cup red cabbage
- 1/4 cup green onions
- 1/4 cup fresh coriander
- Mint leaves
- Toasted peanuts
- Toasted sunflower seeds
- Toasted pumpkin seeds
- 1/2 cup coconut milk
- 1/4 cup toasted peanuts
- 2 tablespoons rice wine vinegar
- 2 drops toasted sesame seed oil
- 1/4teaspoon soy sauce
- 2 tablespoons honey
- 1/4 cup peanut butter
- 1 teaspoon ginger garlic paste
- 1 tablespoon lime juice
- Salt&pepper to taste
- In a blender, add in all the dressing ingredients and blend well till smooth and consistent.
- Wash your vegetables thoroughly with clean running water.
- Mince your ginger.Toast your seeds alongside the nuts and using a knife roughly chop them and set aside.
- Peel the mango and the carrots.Julienne the carrots alongside your cucumber.Chop the mangoes and apples into almost equal bite size pieces.Thinly slice you cabbage and the spring onions.
- Bring everything together in one bowl and drizzle over some of the salad dressing.
- Serve chilled.
